Description
A glass of rum and ginger ale, with a squeeze of lime and a sprig of mint, got things started. The fresh and sweet opening of the nose was soon followed by pipe tobacco, cinnamon and demerara. The palate was nutty and thick, with hazelnuts, stem ginger and toasted coconut mingling with butterscotch and cherry jam. Water gave the nose a spoonful of lime posset, served alongside strawberry gelato, basil and liquorice. The finish was really unctuous, delivering coconut milk, chewing tobacco, apple sauce, crème de menthe and Manhattan cocktails. After 10 years in an ex-bourbon hogshead, we transferred this to a refill oloroso hogshead for the remainder of its maturation.
