Description
There was a bready, doughy yeastiness in the air which one can find in champagne or young fino sherry next to elderflower tonic, lime boiled sweets and honeydew melon. On the palate, the freshness of peppermint floral water preceded sweeter notes of clover honey and golden syrup next to blueberry muffins, almond croissants and a lightly spiced rhubarb compote. Following careful reduction, the light and floral summery scent of a gooseberry fool and a cake full of fresh berries, filled and frosted with creamy, fluffy chantilly cream, came to the fore. To taste, we delighted in the drink of every feria in Spain, rebujito – white wine or sherry mixed with lemon-lime soda and garnished with peppermint leaves.
