Description
After 8 years in ex-bourbon wood we transferred this into a first-fill Spanish oak oloroso hogshead; unsurprisingly it transports you to a bar or bodega in Jerez - sangria and sherry-soaked oak, orange blossom, terracotta pots, leather and tobacco smoke, sun-dried tomatoes, fresh figs and Manchego. The palate is lively and full-flavoured - pears poached in wine, cranberry, pomegranate, honey-glazed dates, ginger snaps and cinnamon biscuits, leading to a finish of tobacco, five-spice and wasabi peas. The reduced nose combines jam donuts, plump raisins and clover honey with patchouli and charcuterie; the palate now has raspberry Ruffle bars, Coca-Cola and dates, with leather and liquorice to finish.
