Aromas of coastal herbs and flowers, wet rocks, white sand and turquoise water conjured up the serene setting of the perfect Scottish beach. On the palate, we found wonderful herbally infused peat emanating from gently sweet, cured smoked trout and lemons preserved using smoked sea salt. Diluted, we rolled up our trousers, kicked off our shoes and searched for shells in the rockpools – reinforcing the peace and serenity of our tranquil haven. Another sip and one of us started quoting from the work of the Spanish playwright Pedro Calderón de la Barca, ‘La vida es sueño’ – life is a dream.
